A Healthy Peanut Butter Mug Cake: (total time 10 mins!; Found on Pinterest!!)

Last night, my husband, Jordan, and I decided to make a delicious dessert that wouldn’t derail our diets! It was so yummy (even though I only had two bites 😦 ) Below is the ingredients and instructions to make your own!

Ingredients:

  • 2 Tbsp of Almond Milk
  • 1 Egg
  • 2 Tbsp of Honey/maple syrup
  • 2 Tbsp of Peanut Butter
  • 1/2 tsp of baking powder
  • 2 Tbsp of Brown rice flour (We used almond flour!)
  • 1 Dark chocolate chips
  • 1 tsp of Vanilla extract
  • 1 1/2 Tbsp of coconut oil

Instructions:

  • Combine the flour and baking powder in a bowl and whisk together
  • Add in all the other ingredients except the chocolate chips, and whisk until well combined
  • Pour the mixture into a mug (we used a medium size one) and top with chocolate chips
  • Place the mug in the MICROWAVE on full power for 2-3 mins and allow to cool sightly
  • Devour
